Prepare fruit

Wash and dry fruit. Hull and chop berries; peel and core melon or pineapple and chop into roughly 1-inch pieces so they blend easily. Measure 4 cups of chopped fruit.

Blend

Place the 4 cups chopped fruit and 1 cup of the cold water in a blender. Blend on high until smooth, about 30–45 seconds, stopping to scrape down the sides once if needed.

Sweeten and season

Add the sugar (or honey/agave), lime juice, and a pinch of salt to the blended fruit. Blend another 5–10 seconds to incorporate. Taste and adjust sweetness or acidity: add up to 1 additional tablespoon sugar or more lime juice to balance, blending briefly after each addition.

Dilute to taste

Pour the purée through a fine-mesh sieve or chinois into a large pitcher, using a spoon to press through if you prefer a smoother drink (optional — keep pulp if you want a heartier texture). Add the remaining 1 cup cold water, stir, and taste. For a lighter drink, add up to 1 more cup water.

Optional finish & garnish

Chill and serve

Add ice to individual glasses or the pitcher. Pour the agua fresca over ice. Stir in a few torn mint leaves if using for a bright finish. Garnish each glass with a lime slice and a sprig of mint.

Make-ahead & storage

Refrigerate the pitcher covered for up to 48 hours. Stir or shake before serving because separation can occur. If storing longer, keep ice separate until serving to prevent dilution.
