Curing the Salmon

Prepare the Cure

In a bowl, combine the sea salt, brown sugar, and black peppercorns. Mix well to ensure even distribution.

Cure the Salmon

Place the salmon fillet in a shallow dish. Pour the ouzo evenly over the salmon, then cover the fillet with the salt-sugar mixture. Top with fresh dill, making sure to press it down into the cure.

Refrigerate

Cover the dish with plastic wrap and refrigerate for 48 hours, turning the salmon every 12 hours to ensure even curing.

Rinse and Pat Dry

After 48 hours, remove the salmon from the cure, rinse it under cold water, and pat it dry with paper towels.

Preparing the Salad

Chop the Vegetables

Dice the ripe avocado, slice the cucumber, and segment the orange. Thinly slice the red onion and radishes.

Mix the Salad

In a large bowl, combine the diced avocado, cucumber slices, orange segments, sliced red onion, and radishes.

Dress the Salad

Drizzle olive oil and lemon juice over the salad. Season with salt and black pepper to taste. Toss gently to combine.

Slice the cured salmon thinly and plate it alongside the prepared salad. Garnish with additional dill if desired.
