Method

Prepare Beans

Drain and rinse

Drain the canned beans in a colander and rinse under cold water. Let them drain well while you prepare the sauce and aromatics.

If you prefer a creamier texture, transfer about 1 cup of the drained beans to a bowl and gently mash with a fork, leaving some chunks. Set aside.

Cook Aromatics

Preheat the oven to 350°F (175°C).

Heat 1 tablespoon oil in a medium skillet over medium heat. Add the chopped onion and a pinch of salt; cook, stirring occasionally, until softened and translucent, about 6–8 minutes.

Add the minced garlic and cook 30–60 seconds until fragrant, then stir in smoked paprika and ground cumin (if using) and cook another 15–20 seconds to bloom the spices. Remove from heat.

Make Sauce

In a large bowl or in the skillet off the heat, combine ketchup, tomato paste, brown sugar, molasses, apple cider vinegar, Dijon mustard, Worcestershire sauce, and optional BBQ sauce. Whisk until smooth.

Stir in the cooked onion and garlic mixture, plus 1/2 cup water or broth to loosen the sauce. Taste and adjust seasoning with kosher salt, black pepper, and hot sauce if using. The sauce should be sweet, tangy, and a bit smoky.

Combine & Bake

In a 2–3 quart oven-safe baking dish (or Dutch oven), combine the drained whole beans, mashed beans (if prepared), and the sauce. Gently fold to coat the beans evenly without breaking them up too much.

If using bacon, stir in chopped cooked bacon now, saving a little for garnish if desired.

Cover the baking dish tightly with foil or a lid and bake in the preheated oven for 45 minutes to 1 hour, until sauce is bubbling and flavors have melded. Stir once halfway through baking.

Remove the cover for the last 10–15 minutes if you want a thicker, slightly caramelized top. If you like a very caramelized top, set oven to broil for 2–3 minutes while watching carefully.

Finish & Serve

Remove from oven and let rest 5 minutes. Taste and adjust seasoning (salt, pepper, vinegar or sugar) as needed.

Garnish with chopped parsley and reserved bacon if using. Serve warm as a side dish with barbecue, burgers, or as part of a picnic spread.
