    Prepare the Base

    In a medium saucepan, combine the heavy cream, whole milk, and sugar. Heat over medium heat until the sugar dissolves and the mixture is hot but not boiling.

    Mix in Vanilla

    Remove the saucepan from the heat and stir in the vanilla extract and olive oil. Set aside to cool slightly.

    Whisk Egg Yolks

    In a separate bowl, whisk the egg yolks until they are pale and thick. This should take about 2-3 minutes.

    Temper the Egg Yolks

    Slowly add a small amount of the hot cream mixture to the egg yolks, whisking constantly to temper them. Then gradually add the tempered egg yolks back into the saucepan with the remaining cream mixture.

    Cook the Mixture

    Return the saucepan to medium heat and cook, stirring constantly, until the mixture thickens enough to coat the back of a spoon. Do not let it boil.

    Add Sea Salt

    Remove from heat and stir in the sea salt. Allow the mixture to cool to room temperature.

    Chill the Mixture

    Once cooled, cover the mixture and refrigerate for at least 4 hours or overnight to chill completely.

    Churn the Ice Cream

    Pour the chilled custard into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Freeze the Ice Cream

    Transfer the churned ice cream to an airtight container and freeze for at least 4 hours or until firm.
