Cake Preparation

    Preheat Oven

    Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking dish.

    Mix Dry Ingredients

    In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

    Cream Butter and Sugar

    In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

    Add Eggs and Vanilla

    Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

    Combine Mixtures

    Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

    Bake the Cake

    Pour the batter into the prepared baking dish and smooth the top. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Allow to cool.

Milk Mixture Preparation

    Combine Milk Ingredients

    In a large bowl, whisk together the sweetened condensed milk, evaporated milk, coconut milk, lime juice, and pineapple juice until well combined.

    Soak the Cake

    Once the cake has cooled, poke holes all over the top using a fork. Slowly pour the milk mixture over the cake, ensuring it soaks in evenly. Cover and refrigerate for at least 4 hours or overnight.

Topping Preparation

    Whip Heavy Cream

    In a mixing bowl, whip the heavy cream and powdered sugar together until soft peaks form.

    Spread on Cake

    Spread the whipped cream over the top of the soaked cake.

    Garnish

    Sprinkle shredded coconut on top, and add pineapple chunks and lime zest for garnish.
