Method
Granita Preparation
Make the Granita Base
In a medium saucepan, combine water and granulated sugar. Heat over medium heat, stirring until the sugar is completely dissolved.
Add Lemon Juice and Mint
Remove the saucepan from heat and stir in the fresh lemon juice. Let the mixture cool. Once cooled, add the fresh mint leaves to infuse flavor.
Freeze the Granita
Pour the mixture into a shallow dish and place it in the freezer. Every 30 minutes, scrape the surface with a fork to create a fluffy granita texture. Repeat this process for about 3 hours, or until fully frozen.
Oyster Preparation
Prepare the Oysters
Shuck the oysters carefully, placing each one on a serving plate, making sure to keep the oyster juice intact.
Serve with Horseradish
Top each oyster with a small spoonful of prepared horseradish.
Garnish with Lemon
Serve the oysters with lemon wedges on the side for squeezing over the top.
