Method
Preparation
- 1
Prepare the Lemons
Wash the lemons thoroughly under running water to remove any dirt or wax. Pat them dry with a clean kitchen towel.
- 2
Zest the Lemons
Using a vegetable peeler or a microplane, carefully zest the lemons. Avoid the white pith as it can impart a bitter flavor. Place the zest in a large glass jar or a bowl.
- 3
Juice the Lemons
Cut the lemons in half and juice them using a citrus juicer. Strain the juice to remove seeds and pulp and add the juice to the jar with the zest.
Making the Limoncello
- 4
Combine Ingredients
To the jar with lemon zest and juice, add the vodka. Stir gently to combine. Seal the jar tightly with a lid.
- 5
Infuse the Mixture
Let the mixture infuse at room temperature for about 1 week. Shake the jar gently every couple of days to help release the flavors.
- 6
Prepare the Simple Syrup
In a saucepan, combine the water and granulated sugar. Heat over medium heat, stirring until the sugar is fully dissolved. Let it cool completely.
- 7
Strain the Mixture
After 1 week, strain the infused vodka through a fine-mesh sieve or cheesecloth into a clean bottle to remove the lemon zest.
- 8
Combine with Syrup
Once the simple syrup has cooled, combine it with the strained lemon-infused vodka. Taste and adjust sweetness by adding more syrup if desired.
- 9
Chill and Serve
Seal the limoncello in a bottle and refrigerate for at least 24 hours before serving. Serve chilled as a digestif or in cocktails.
