    In a small saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar has completely dissolved. Remove from heat and allow to cool.

    In a large glass jar, combine the neutral grain spirit and the cooled sugar syrup. Stir well to mix.

    Prepare the Infusion

    Add the dried orange peel, dried wormwood, chamomile flowers, juniper berries, cardamom pods, ginger root, cinnamon stick, and mint leaves to the jar with the base mixture.

    Infuse the Ingredients

    Seal the jar tightly and store it in a cool, dark place for at least 2 weeks. Shake the jar gently every few days to help the flavors meld.

Finalizing the Amaro

    Strain the Mixture

    After 2 weeks, open the jar and strain the mixture through a fine-mesh sieve or cheesecloth into a clean bottle to remove the solids.

    Split the vanilla bean lengthwise and add it along with the whole cloves and star anise to the strained liquid. Seal the bottle and let it age for an additional 2 weeks.
