Prepare the Patties

In a large mixing bowl, combine the ground beef, salt, and black pepper. Mix until just combined. Divide the mixture into 4 equal portions and shape them into balls.

Smash the Patties

Preheat a cast-iron skillet or griddle over medium-high heat. Place the balls of beef on the skillet and smash them down with a spatula to form patties. Cook for about 3-4 minutes on one side until browned, then flip and cook for an additional 2-3 minutes.

Make the Sauce

In a small saucepan, combine the pineapple rum, sugar, and lime juice. Heat over medium heat, stirring until the sugar dissolves. Allow the sauce to simmer for about 5-7 minutes until slightly thickened.

Burger Assembly

Assemble the Burgers

Toast the burger buns lightly on the skillet or griddle. Place a layer of lettuce on the bottom half of each bun, followed by a patty, a slice of cheese, and two slices of tomato. Drizzle the pineapple rum sauce over the top and cap with the top half of the bun.
