Method
Preparation
- 1
Preheat the Oven
Preheat your oven to 220°C (425°F) to ensure it's hot enough to create the molten center of the cakes.
- 2
Making the Cake Batter
- 3
Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together using a microwave or a double boiler until smooth, stirring occasionally.
- 4
Mix in Sugar and Eggs
Remove the bowl from heat and stir in the granulated sugar until well combined. Next, add the large eggs and egg yolks one at a time, mixing well after each addition. Stir in the vanilla extract.
- 5
Add Flour and Salt
Sift the all-purpose flour and pinch of salt into the chocolate mixture. Gently fold until just combined, being careful not to overmix.
Baking the Cakes
- 6
Fill Ramekins
Pour the batter evenly into the prepared ramekins, filling each about 3/4 full.
- 7
Bake the Cakes
Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.
- 8
Cool Slightly
Remove the cakes from the oven and let them cool for about 1 minute before inverting them onto plates.
Serving
- 9
Serve with Ice Cream
Serve the warm lava cakes immediately with a scoop of vanilla ice cream on the side for a delightful contrast.
