Crust Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C).

Mix the Crust Ingredients
In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and the mixture resembles wet sand.

Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 8-10 minutes, then remove and let it cool.
Filling Preparation

Beat the Cream Cheese
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

Add Sugar and Sour Cream
Add the granulated sugar, sour cream, and vanilla extract to the cream cheese. Mix on medium speed until well incorporated.

Add Flour
Finally, add the all-purpose flour and mix just until combined. Do not overmix.

Pour the Filling
Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula.
Baking and Cooling

Bake the Cheesecake
Bake in the preheated oven for 55-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and crack the door, letting the cheesecake cool in the oven for 1 hour.

Chill the Cheesecake
Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, cover and refrigerate for at least 4 hours, preferably overnight.

Prepare the Berries
In a medium bowl, toss the fresh mixed berries with powdered sugar. Let them sit for about 10-15 minutes to release their juices.

Release the cheesecake from the springform pan. Top with the berry mixture and garnish with mint leaves before serving.
