Chill a coupe or Nick & Nora glass in the freezer. In a cocktail shaker, add 2 oz gin, 0.75 oz fresh lemon juice, 0.5 oz fresh grapefruit juice, 0.5 oz elderflower liqueur, 0.5 oz simple syrup, 1 whole egg white, and 2 dashes of grapefruit or orange bitters. Do not add ice yet. Seal the shaker and perform a vigorous dry shake for 20–30 seconds to emulsify the egg white and create a silky foam.

Prepare and dry shake

Open the shaker, add a generous scoop of ice (enough to chill quickly), reseal, and shake vigorously for another 15–20 seconds until the shaker is cold to the touch and the foam has stabilized.

Wet shake

Remove the chilled glass from the freezer. Double-strain the cocktail into the glass using a Hawthorne or fine mesh strainer to remove ice shards and ensure a smooth texture. The result should be silky, lightly frothy with balanced acidity and floral notes.

Double strain and serve

Float a thin grapefruit wheel or a grapefruit twist on the foam surface. Optionally top with a micro herb sprig or a single edible flower petal. For an aromatic finish, express a grapefruit peel over the drink (pinch the peel skin-side down over the cocktail to release oils) before placing the garnish.
