Chill a 750 ml bottle of dry rosé well in the refrigerator until cold (ideally 2–4 hours) or in an ice bucket for 20–30 minutes before assembling.

Hull and quarter fresh strawberries and cut seedless watermelon into small 1/2-inch cubes. Measure 1 cup of each, pressing lightly in the measuring cup so fruit is compact but not pureed.

Prepare fruit

In a large pitcher, add the strawberries, watermelon, 45 ml simple syrup, 30 ml watermelon liqueur or cordial (if using), and the fresh lemon juice (60 ml). Add 4 of the mint leaves torn gently (reserve remaining leaves for garnish). Using a wooden muddler or the back of a spoon, gently muddle just enough to release juices and aromatic oils — about 10–15 firm presses. Avoid over-mashing to keep some texture.

Muddle for concentrated flavor

If you want a clear, refined final wine with more perfume and less pulp, strain the muddled fruit mixture through a fine mesh sieve into a bowl or pitcher, pressing to extract juices and discarding solids. If you prefer a more rustic presentation, leave the fruit in the pitcher.

Strain (optional)

Add 1 tsp finely grated orange zest to the pitcher with the fruit juice. Add the chilled rosé (750 ml) and stir gently to combine. Taste and adjust sweetness or tartness: add up to 15–30 ml more simple syrup if you prefer sweeter, or an additional 5–10 ml lemon juice if you prefer brighter tartness.

If you want a lighter, longer drink with more effervescence (and a more spritz-like profile), add 250 ml chilled sparkling water now and stir gently once to combine. Otherwise keep without sparkling for a more wine-forward expression.

Fill wine glasses or a large carafe with ice (large cubes or crushed depending on preference). Pour the Pinke Pinke over the ice, making sure each serving receives some fruit pieces if left in the pitcher. Garnish each glass with a reserved mint leaf and, optionally, a thin lemon wheel or a small strawberry slice on the rim.

Serve immediately while cold. Leftovers: keep refrigerated in a sealed bottle or pitcher for up to 24–36 hours; if the mixture was strained and sparkling water added, consume within 8–12 hours to preserve effervescence.
