Rinse the strawberries, mint, cucumber, orange, and lemon. Hull and halve the strawberries. Thinly slice the orange and lemon into rounds. Thinly slice half the cucumber crosswise. Lightly bruise the mint leaves by clapping them between your palms or gently muddling so they release aroma without becoming bitter.

Wash and slice

Place the prepared strawberries, two orange slices, two lemon slices, cucumber slices (if using), and most of the bruised mint leaves into a large pitcher (at least 2 liters). Reserve a few slices and mint sprigs for garnish.

Add the simple syrup (45 ml) and fresh lemon juice (60 ml) into the pitcher with the fruit. Gently stir to combine so the sugar syrup starts to macerate the strawberries and citrus for 5–10 minutes. This extraction brightens the fruit flavors and mellows the wine once added.

Pour the entire chilled bottle of light-bodied red wine (750 ml) into the pitcher over the macerating fruit. Stir gently to incorporate. Taste and adjust sweetness — add up to an additional 15–30 ml simple syrup if you prefer it sweeter.

Refrigerate the mixture for at least 20 minutes (up to 2 hours). Chilling allows the fruit aromatics to infuse without oxidizing the wine too much.

Just before serving, add the sparkling water (375 ml) to the pitcher and gently stir once to preserve carbonation. Add large ice cubes or an ice block to the pitcher to keep the drink cold without diluting quickly.

Pour into chilled wine glasses or tall glasses filled with a couple of ice cubes. Make sure each glass gets some fruit pieces. Garnish each glass with a lemon or orange wheel and a fresh mint sprig.

Serve immediately. If you expect leftovers, keep them refrigerated and add sparkling water only to the portion being served to retain fizz; consume within 18–24 hours for best freshness.
