Preheat the Oven

Preheat your oven to 350°F (175°C).

Prepare Baking Sheet

Line a baking sheet with parchment paper or grease it lightly.

Mixing Ingredients

Combine Dry Ingredients

In a large bowl, whisk together all-purpose flour, ground cinnamon, ground mace, baking powder, and salt until evenly mixed.

Combine Wet Ingredients

In another bowl, mix the shredded coconut, granulated sugar, eggs, vanilla extract, and milk until well combined.

Combine All Ingredients

Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix. Fold in the raisins.

Baking

Scoop and Bake

Using a cookie scoop or tablespoon, drop spoonfuls of the batter onto the prepared baking sheet, leaving space between each to allow for spreading.

Bake

Bake in the preheated oven for about 12-15 minutes, or until the edges are lightly golden and the centers are set.

Cool

Remove the baking sheet from the oven and let the cookies cool on the sheet for 5 minutes before transferring them to a wire rack to cool completely.
