Roasting the Garlic

Preheat the oven to 400°F (200°C). Cut the tops off the garlic bulbs, drizzle with olive oil, and wrap them in aluminum foil. Roast in the oven for 40-45 minutes until soft and caramelized.

Preparing the Herb Spread

In a mixing bowl, combine the roasted garlic (squeezed out of the skins), goat cheese, cream cheese, fresh herbs, lemon juice, salt, and black pepper. Whip together until smooth and creamy.

Making the Crostinis

Slice the baguette or Italian bread into 1/2-inch thick slices. Brush each slice with olive oil and toast in the oven for about 8-10 minutes or until golden brown.
