Branzino and Salsa Verde

Cooking Instructions
Prepare the Salsa Verde
In a bowl, mix together the chopped parsley, capers, minced garlic, lemon juice, and 1 tablespoon of olive oil. Season with salt and pepper to taste. Set aside.
Cook the Branzino
In a large skillet, heat the remaining tablespoon of olive oil over medium-high heat. Season the branzino fillets with salt and pepper. Once the oil is hot, add the fillets to the skillet, skin side down. Cook for about 4-5 minutes until the skin is crispy, then carefully flip and cook for another 2-3 minutes until cooked through.
Serve
Plate the seared branzino and top with the salsa verde. Serve alongside roasted Tuscan potatoes.
