Chill glass

Place an old-fashioned glass in the freezer or fill it with ice and water to chill while you build the drink.

Measure the ingredients: 2 oz Japanese whisky, 1/2 oz Averna, 1/4 oz Nocino, and 3 dashes umami bitters.

Add the measured whisky, Averna, Nocino, and umami bitters into a mixing glass or shaker filled with plenty of ice.

Stir the mixture for 20–30 seconds until well chilled and slightly diluted (aim for a very cold and silky mouthfeel). Use a bar spoon and smooth, continuous strokes.

Discard the ice/water from the chilled old-fashioned glass and place a large clear ice cube in the glass.

Strain the stirred cocktail over the large ice cube into the chilled old-fashioned glass using a julep or fine strainer to catch any small shards of ice.

Express the orange peel over the drink: hold the peel with the outer (zesty) side facing down over the glass and give it a firm twist to release oils across the surface of the cocktail. Then rub the peel along the rim and drop it into the drink as garnish.

Serve immediately. Optionally, add one more tiny dash of umami bitters on top for aroma if desired.
