Prepare Glass & Garnish

Toast sesame seeds

Lightly toast the sesame seeds in a small dry skillet over medium heat for 1–2 minutes until fragrant and just beginning to color. Remove from heat and let cool.

Chill a rocks glass in the freezer for at least 5 minutes (or fill with ice water while you prepare the drink). Place a large clear ice cube or sphere into the chilled glass just before serving.

Express a lemon twist over the glass by holding the twist over the glass and giving it a quick squeeze to release oils; reserve the twist for garnish.

Build & Mix Cocktail

Combine Nocino (0.75 oz), Japanese umami whisky (0.75 oz), Billy Joe Sake (0.75 oz), and Averna amaro (0.25 oz) into a mixing glass.

Add fresh lemon juice (0.5 oz) and simple syrup (0.25 oz) to the mixing glass to brighten and balance the herbal/umami flavors.

Very gently add toasted sesame oil (1 tsp) to the mixing glass. Because sesame oil is strong, add it in the middle of stirring so it disperses as a fat-wash-like ribbon rather than forming a slick on top.

Add one dash of aromatic bitters if using to add complexity.

Fill the mixing glass with large ice and stir the mixture for 20–30 seconds (about 15–20 revolutions) until well-chilled and properly diluted (the glass should sweat lightly). Stirring integrates the sesame oil and gives a silky texture.

Finish & Serve

Strain the cocktail through a fine-mesh strainer into the chilled rocks glass over the large ice cube/sphere. The fine strain will catch any sesame solids and small ice chips.

Sprinkle the toasted sesame seeds (approx. 1 tsp) over the surface of the drink — they will float briefly and release aroma as you sip.

Twist the reserved lemon peel over the cocktail once more, rub the rim lightly with the peel, and drop the twist into the drink as garnish.

Serve immediately. Recommend sipping slowly to appreciate the interplay of walnut sweetness, umami whisky, sake brightness, and sesame aroma.
