Wine Making Process

1. Harvesting the Grapes

Begin by hand-harvesting the ripe Pinot Grigio grapes from the vineyard in Goriška Brda. Ensure they are free from rot and disease.

2. Crushing and Pressing

Crush the grapes gently to release their juice. Transfer the crushed grapes to a press and extract the juice.

3. Fermentation

In a sanitized fermentation vessel, add yeast to the grape juice and mix gently. Allow the mixture to ferment at a controlled temperature of around 18-20°C for about 2-3 weeks.

4. Racking

Once fermentation is complete, transfer the wine to another vessel, leaving sediment behind. This process is known as racking.

5. Aging

Age the wine in stainless steel tanks or oak barrels for at least 6 months to develop its flavors.

6. Bottling

After aging, add sulfur dioxide to stabilize the wine. Bottle the wine in clean, sterilized bottles and seal with corks.

7. Labeling and Enjoying

Label the bottles with the vintage and vineyard information. Chill the wine before serving and enjoy the crisp, fruity flavors.
