Trim and clean

Fill a large bowl with cold water and stir in 1 tablespoon coarse salt and the juice from the halved lemon (drop the lemon halves in the water to avoid browning). Working quickly, trim each artichoke: remove the tough outer leaves until you reach the pale tender leaves, cut the stem flush with the base so the artichoke will sit flat, and trim the top 1/3 of the artichoke to remove sharp tips. Use a small paring knife to remove any remaining tough outer fibers and to shape the artichoke into a rounded bud. Rub the cut surfaces immediately with the lemon halves and drop the trimmed artichokes into the acidulated water to prevent browning.

Open the leaves

Holding an artichoke over the sink, gently press on the base so the leaves fan out slightly but remain attached at the stem—do not separate the leaves completely. The goal is to create a flower-like shape so oil and hot fat can penetrate between leaves during frying.

Dry and rest

Once all artichokes are trimmed and fanned, drain them well and pat very dry inside and out with clean kitchen towels or paper towels. Let them air-dry on a rack for 10–15 minutes to remove surface moisture; excess water will cause dangerous oil splatter during frying.

Heat the oil

Pour about 1 liter of neutral high-smoke-point oil into a deep, heavy pot (use enough oil to come at least half to two-thirds up the sides of the artichokes when placed upright). Attach a thermometer and heat the oil to 175°C (350°F). Maintain medium-high heat to keep temperature steady.

First blanch-fry (gentle)

Working with one or two artichokes at a time (depending on pot size — do not overcrowd), lower each artichoke upright into the oil using tongs so the base goes in first and the leaves remain above the oil for a moment; this prevents immediate trapping of steam. After a few seconds, tip the artichoke so oil flows between leaves. Fry gently for 6–8 minutes at 160–170°C (320–340°F) until the artichoke is softened and pale golden. This step cooks the interior without over-browning the exterior. Remove with a spider/skimmer and drain upside down on a rack or paper towel-lined tray.

Second crisp-fry

Increase the oil temperature to 190–195°C (375–385°F). Fry the partially cooked artichokes in batches again, this time for 2–4 minutes until the leaves are deeply golden-brown and crisp. As the leaves crisp they will open slightly and become lacy. Remove and drain thoroughly on a rack or paper towels.

Season and serve

While still hot, drizzle or brush each artichoke lightly with the 2 tablespoons extra-virgin olive oil. Sprinkle fine sea salt to taste (start with about 1 teaspoon distributed among the 6 artichokes) and a light grind of black pepper if using. Serve immediately so the exterior remains crisp and the interior tender. Carciofi alla Giudia are traditionally eaten by pulling off the leaves and scraping the tasty fried flesh with your teeth, finishing with the heart at the center.

Storage note: Best eaten immediately. Leftovers will lose crispness; to re-crisp briefly bake at 200°C (400°F) for 6–8 minutes.
