Prepare the Caprese

Slice the heirloom tomatoes and arrange them on a plate. Tear the burrata and place it on top of the tomatoes. Drizzle with basil pesto and balsamic reduction. Season with salt and pepper.

Cook the Chicken

Heat olive oil in a skillet over medium heat. Season chicken breasts with salt and pepper. Add chicken and cook for 6-7 minutes per side until golden brown. Add minced garlic and fresh thyme, then deglaze with white wine and add chicken broth. Cook until the chicken is cooked through.

Make the Chocolate Mousse

Heat heavy cream until just boiling. Pour over chopped dark chocolate and let sit for 5 minutes, then stir until smooth. Allow to cool, then refrigerate until set. Serve with fresh raspberries, a dusting of powdered sugar, and mint leaves.
