Form patties

Divide the ground chuck into four equal portions (about 5 oz each). Gently shape each portion into a round patty about 3/4 inch thick, handling the meat as little as possible to avoid compacting it. Make a shallow dimple in the center of each patty with your thumb (this prevents doming during cooking).

Season

Lightly brush each patty with the neutral oil. Sprinkle both sides of each patty with kosher salt and freshly ground black pepper. If using Worcestershire sauce, very lightly brush or sprinkle about 1/2 tablespoon distributed among the patties before seasoning.

Preheat cooking surface

Preheat a heavy cast-iron skillet or grill to medium-high (about 400–450°F / 200–230°C). If using a skillet, add a small amount of oil and heat until shimmering but not smoking.

Cook patties

Place the patties on the hot skillet or grill with the dimpled side up. Cook without moving for 3–4 minutes until a deep brown crust forms. Flip once and cook 2.5–4 minutes more for medium (internal temperature about 140–145°F / 60–63°C). For cheeseburgers, place a slice of cheese on each patty in the last minute of cooking and cover the pan or close the grill lid to melt.

Rest

Transfer cooked patties to a plate and let rest 3–5 minutes. This allows juices to redistribute and prevents the buns from becoming soggy when assembled.

Buns & finishing

Prepare buns: While the patties cook, split the buns and spread the softened butter on the cut sides. Toast the buttered cut sides on the hot skillet or grill for 30–60 seconds until golden and crisp. Remove and keep warm.

Sauce

Make burger sauce

In a small bowl, whisk together mayonnaise, ketchup, yellow mustard, dill pickle relish (if using), and smoked paprika or a dash of hot sauce. Taste and adjust seasoning. Keep chilled until assembly.

Toppings & assembly

Assemble burgers: Spread sauce on both toasted bun halves (bottom and top). Place a lettuce leaf on the bottom bun, then the rested patty with melted cheese. Add tomato slice(s), a few rings of red onion, and pickles to taste. Finish with the top bun and gently press to hold together.

Serve: Serve immediately with your choice of sides (fries, potato chips, or a simple salad).
