Make the orange simple syrup
In a small saucepan combine 0.25 cups granulated sugar, 0.25 cups water, and 1 tablespoon finely grated orange zest. Bring to a gentle simmer over medium-low heat, stirring until the sugar fully dissolves (about 2–3 minutes). Maintain a gentle simmer for 1 minute to allow the zest to infuse. Remove from heat and let the syrup steep for 10 minutes to intensify orange flavor. Strain the syrup through a fine mesh sieve to remove the zest solids, pressing gently to extract liquid. Stir in 1/8 tsp vanilla extract if using. Let the syrup cool to room temperature; you can chill it briefly in the fridge if you want a cold drink faster.

Assemble the Orange Fanta
Fill a 12–16 oz serving glass with 1 cup of ice cubes. Pour in 1/2 cup (4 fl oz) freshly squeezed orange juice and 1/2 teaspoon fresh lemon juice. Add 2 tablespoons of the prepared orange simple syrup (or 2 tbsp bottled orange concentrate). Gently pour 1 cup chilled club soda or sparkling water over the mixture to preserve fizz. Stir once gently with a bar spoon or straw to combine, taking care not to flatten the carbonation. Taste and adjust sweetness: add an extra 1/2–1 tablespoon syrup if you prefer sweeter, more soda-like drink.
