Sushi Rice & Seasoning

    Rinse and cook rice

    Rinse 2 cups short-grain sushi rice under cold water until the water runs almost clear (about 4–6 rinses) to remove excess starch. Drain. Combine rinsed rice and 2.25 cups water in a rice cooker or saucepan. If using a saucepan, bring to a boil, reduce heat to low, cover and simmer 15 minutes. Remove from heat and let stand, covered, 10 minutes.

    Season rice

    While rice cooks, warm 3 tbs rice vinegar, 1.5 tbs sugar and 1 tsp kosher salt in a small saucepan or microwave just until dissolved; do not boil. Transfer cooked rice to a wide shallow bowl or wooden hangiri if available. Gently fold in vinegar mixture with a rice paddle or wooden spoon, using cutting-and-fanning motions to cool the rice and preserve grains. Aim for slightly sticky, glossy rice. Cover with a damp towel and keep at room temperature while assembling (do not refrigerate).

Filling

    Prepare crab and mayo

    Shred or chop 8 crab sticks into long thin pieces. In a small bowl, mix 2 tbs mayonnaise with 1 tsp sriracha (optional) to taste. Toss crab with the spicy mayo until evenly coated.

    Prepare vegetables

    Peel, pit and slice the avocado into 8 long thin slices (about 1 cup). Seed and julienne 1/2 cup cucumber into matchsticks. Keep fillings ready on a plate for quick assembly.

Assembly & Crunch

    Make crunchy panko (if not using tempura flakes)

    If making crunchy panko: heat a small skillet over medium heat and add 2 tbs neutral oil. Add 1/2 cup panko and toast, stirring frequently, until golden and crisp (2–4 minutes). Remove from heat and let cool. Combine toasted panko with 1/2–3/4 cup tempura flakes if using, or use 1 cup tempura flakes alone. Stir in 1 tsp toasted sesame seeds if desired.

    Assemble the roll

    Place a bamboo mat on a clean surface and cover it with plastic wrap (helps prevent sticking). Place 1 sheet of nori, shiny side down, on the plastic. Wet your hands with water mixed with a pinch of rice vinegar to prevent sticking. Spread about 3/4 cup of seasoned sushi rice evenly over the nori, leaving a 1-inch (2.5 cm) strip at the top edge without rice. Sprinkle a thin layer of tempura flakes (about 1–2 tbs) across the center of the rice where you will place the filling — this gives additional crunch inside the roll. Place a strip of crab mixture, 2 slices of avocado and a few cucumber matchsticks horizontally across the rice, roughly 1 inch from the bottom edge.

    Roll and seal

    Lift the edge of the bamboo mat closest to you and begin rolling away from you, tucking the filling as you go to form a tight cylinder. Apply gentle, even pressure with the mat to compress the roll. When you reach the rice-free edge of the nori, wet the edge with a little water to seal the roll seam. Set seam side down.

    Add exterior crunch (optional)

    If you want a crunchy exterior: spread a thin layer of mayonnaise (about 1 tsp) along the top of the roll and press the roll, mayo-side down, into the bowl of tempura flakes/panko so they adhere. Alternatively, you can sprinkle flakes on top and lightly press with the mat. For fully coated crunch, rotate and press all around to adhere, or leave just the top crunchy.

    Slice the roll

    Using a very sharp knife dipped in water (wipe between cuts), trim off the rough ends of the roll and slice into 8 equal pieces. Clean the knife and re-wet between cuts for clean edges. Arrange pieces on a platter, crunchy side up.

To Serve

    Serve the crunchy roll immediately with soy sauce, pickled ginger and wasabi on the side. Crunch is best right after assembly; if making ahead, store uncut rolls in plastic wrap at room temperature no more than 2 hours to preserve texture. Leftover sushi rice can be refrigerated up to 24 hours but will lose ideal texture.

    Tips: Keep a small bowl of water with a splash of rice vinegar nearby to wet your hands and knife. Use fresh, very sharp knife for neat slices. For variation, substitute cooked shrimp tempura or spicy tuna for the crab filling. If using raw fish, ensure it is sushi-grade and handled safely.
