Citrus Brightness (optional)
Ice & Glassware
Method
Preparation
- 1
Chill glass and ingredients
If possible, place the serving glass in the freezer for 5–10 minutes or fill it with ice water while you prepare other items. Make sure the Pepsi is well chilled.
- 2
Prepare garnishes: drain a maraschino cherry (reserve a bit of the cherry syrup if you want an extra-sweet pop) and slice a lime wedge if using.
Build the Cherry Pepsi
- 3
Fill the chilled glass about three-quarters full with ice cubes (roughly 1 cup).
- 4
Pour 12 fl oz chilled Pepsi slowly into the glass over the ice to minimize foaming.
- 5
Add 1 tablespoon cherry syrup (grenadine or cherry-flavored syrup) to the soda. If you want a stronger cherry flavor, add the optional 1 teaspoon concentrated cherry juice as well. Stir gently once with a long spoon to blend—avoid vigorous stirring to preserve carbonation.
- 6
For a subtle bright note, add 1/2 teaspoon fresh lime juice and gently stir (optional).
- 7
Taste and adjust: if you prefer sweeter/more cherry, add up to an additional 1/2 tablespoon cherry syrup; for more brightness, add another 1/4 teaspoon lime juice.
Garnish & Serve
- 8
Drop one maraschino cherry into the drink and place the lime wedge on the rim (if using). If you reserved any cherry syrup from the jar, you may drizzle a small amount over the top for visual appeal.
- 9
Serve immediately with a straw. Enjoy cold.
