Preparation Steps

1

Prepare the Sweet Potato Hash

Peel and dice the sweet potato into small cubes. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sweet potato and cook until tender, about 10-15 minutes.

2

Add Vegetables

Once the sweet potato is nearly cooked through, add the chopped onion, roasted red pepper, corn, and spinach to the skillet. Season with salt and pepper, and cook for another 5-7 minutes until the vegetables are heated through and spinach is wilted.

3

Cook the Eggs

In a separate pan, heat the remaining tablespoon of olive oil over medium-low heat. Crack the eggs into the pan and cook until the whites are set but the yolks are still runny, about 3-4 minutes for over easy.

4

Prepare the Avocado

While the eggs are cooking, smash the avocado in a bowl and season with salt and pepper to taste.

5

Assemble the Dish

On a plate, layer the sweet potato hash, top with the cooked eggs, and serve with the smashed avocado and a whole wheat tortilla on the side.
