Prepare the Avocado

Cut the ripe avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork, adding salt and pepper to taste. Set it aside.

Cook the Bacon

In a skillet over medium heat, cook the bacon strips until crispy. Remove from the skillet and place on paper towels to drain.

Cook the Eggs

In the same skillet with some of the leftover bacon fat, reduce the heat to low. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 2-3 minutes. Carefully flip the eggs and cook for an additional minute. Remove from heat.

Toast the Bread

While the eggs are cooking, toast the slices of house bread until golden brown. You can brush them lightly with olive oil for added flavor.

Assemble the Toast

Spread a generous amount of the smashed avocado on each slice of toasted bread. Top with crispy bacon, a slice of fontina cheese, and the over-easy eggs. Finish with a handful of arugula on top.

Serve

Season with additional salt and pepper if desired, and serve immediately.
