Prepare tomatoes

Wash tomatoes, remove cores, and cut into 1-inch wedges. Place in a large mixing bowl.

Prepare cucumber

Peel the cucumber if desired, halve lengthwise and scoop out seeds if very watery. Slice into 1/2-inch half-moons and add to the bowl with tomatoes.

Slice onion and pepper

Peel and thinly slice the red onion into half-moons (about 1/8-inch thick). Core, seed, and thinly slice the green bell pepper into strips. Add both to the bowl.

Add olives and feta

Add the Kalamata olives to the vegetables. Cut the feta block into 1/2-inch cubes or break into large crumbles and scatter over the top.

Add parsley (optional)

Chop the flat-leaf parsley roughly and sprinkle over the salad if using.

Dressing & Finish

Make the dressing

In a small bowl or jar, combine the extra-virgin olive oil, red wine vinegar, fresh lemon juice, minced garlic, dried oregano, kosher salt, and black pepper. Whisk or shake vigorously until combined and slightly emulsified.

Dress the salad

Pour the dressing over the salad ingredients in the large bowl. Gently toss with two large spoons to coat vegetables evenly, being careful not to break up the feta too much.

Adjust seasoning and serve

Taste and adjust seasoning with extra salt, pepper, or a splash more vinegar or lemon if desired. Transfer to a serving plate or bowl and serve immediately at room temperature (or chilled briefly).
