Prepare the Wagyu Flank Steak

Season the Wagyu flank steak with salt and black pepper on both sides. Heat olive oil in a large skillet or grill over medium-high heat.

Cook the Steak

Sear the steak for about 4-5 minutes on each side for medium-rare, adjusting the time according to your preferred doneness. Remove from heat and let it rest for 10 minutes before slicing.

Make the Whipped Potatoes

Peel and chop the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain and return to the pot.

Whip the Potatoes

Add butter and heavy cream to the potatoes. Mash and whip until smooth and creamy. Season with salt to taste.

Prepare the Fermented Ramp Verde

In a blender, combine fermented ramps and a bit of olive oil. Blend until smooth. Adjust seasoning as needed.

Prepare the Natural Jus

In the same pan used for the steak, add beef stock and simmer for about 10 minutes until slightly thickened. Adjust seasoning as necessary.

Plate the Dish

Slice the rested steak against the grain. Serve alongside whipped potatoes, drizzled with fermented ramp verde, a dollop of Calabrian chili paste, and natural jus. Garnish with fresh parsley.
