Biscuit Preparation

Make the Biscuit Dough

In a large bowl, whisk together the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk and seeds until just combined.

Bake the Biscuits

Preheat the oven to 400°F (200°C). Drop spoonfuls of the dough onto a greased baking sheet and bake for 15-20 minutes until golden brown.

Griddled Peaches Preparation

Prepare the Peaches

Slice the peaches in half and remove the pit. Heat butter in a skillet over medium heat.

Griddle the Peaches

Place the peach halves cut-side down in the skillet and cook for 3-4 minutes until caramelized. Flip and cook for another 2 minutes.

Parmesan Veloute Preparation

Make the Veloute

In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes. Gradually whisk in the milk until smooth. Cook until thickened, then stir in Parmesan, and season with salt and pepper.

Assembly

Plate the Dish

On each plate, place a warm biscuit, top with the griddled peaches, drizzle with Parmesan veloute, add a dollop of sour cream, sprinkle with fresh mint, and finish with a drizzle of aged balsamic vinegar.
