Prepare the Eggplant Puree

Roast the eggplants whole in a preheated oven at 400°F (200°C) for about 30-40 minutes, until soft. Allow to cool, then scoop out the flesh and blend it with 2 tablespoons of olive oil, smoked paprika, salt, and pepper until smooth.

Caramelize the Cipollini Onions

Slice the cipollini onions thinly. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the onions and cook slowly, stirring occasionally, until caramelized, about 15-20 minutes. Season with salt and pepper.

Cook the Fava Beans

If using fresh fava beans, blanch them in boiling water for 2-3 minutes, then remove the skins. For canned or frozen, simply drain and rinse. Set aside.

Make the Anchovy Dressing

In a small bowl, mash the anchovy fillets with minced garlic and lemon juice until well combined. Drizzle in 2 tablespoons of olive oil and mix until smooth.

Cook the Fish

Season the fish fillets with salt and pepper. Heat a skillet over medium-high heat and add a little olive oil. Cook the fish for about 4-5 minutes on each side, or until cooked through and golden brown.

Assemble the Dish

On each plate, spread a generous layer of smoky eggplant puree, top with the cooked fish, spoon caramelized onions, and fava beans around, then drizzle with anchovy dressing.
