Bread Preparation

Mix the Dough

In a large mixing bowl, combine the all-purpose flour and salt. In a separate bowl, mix together the sourdough starter and water until well combined. Gradually add the wet mixture to the dry ingredients, stirring until a dough forms.

Knead the Dough

Turn the dough out onto a floured surface and knead for about 10 minutes until it becomes smooth and elastic.

First Rise

Place the kneaded dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for 4-6 hours, or until doubled in size.

Shape the Dough

Once the dough has risen, turn it out onto a floured surface, gently punch it down to remove air bubbles, and shape it into a round loaf.

Second Rise

Place the shaped loaf on a floured proofing basket or a baking sheet, cover it, and let it rise for another 1-2 hours.

Preheat the Oven

About 30 minutes before baking, preheat your oven to 450°F (230°C). If using a Dutch oven, place it inside the oven to heat up as well.

Bake the Bread

Once preheated, carefully transfer the risen loaf into the Dutch oven or onto a baking sheet. If using a Dutch oven, cover it with the lid. Bake for 30 minutes covered, then remove the lid and bake for an additional 15-20 minutes until golden brown.

Cool and Serve

Remove the bread from the oven and let it cool on a wire rack for at least 30 minutes before slicing. Serve with butter, radish, and sea salt.
