Sanitize and set up dispensers
Thoroughly wash and sanitize both beverage dispensers (and any pitchers or serving vessels) according to local food-safety guidelines. Rinse well so no sanitizer residue remains.

Fill and chill waters
Fill one dispenser with filtered still water and the other with filtered sparkling water (or attach carbonation keg to dispenser). Chill both in a cool place or on ice until serving temperature (around 4–8°C / 39–46°F). If using ice, place dispensers in an ice bin so they stay cold without diluting.

Prepare optional garnishes
If offering citrus, slice lemons and limes thinly and place in a small pitcher next to the dispensers. Keep garnishes covered and refrigerated until service.

Set display and signage
Place dispensers on a stable table with drip trays under the spigots. Position signage prominently explaining 'Unlimited Still or Sparkling Water — Please Reuse Glasses' and, if relevant, note sustainability message about reducing carbon and glass waste.

Handle sparkling water safely
If dispensing carbonated water from a keg or carbonation system, ensure connections are secure and pressure is controlled. Open and close taps gently to prevent excessive foaming and loss of CO2.

Monitor levels and refill
Check water levels regularly and refill dispensers from bulk containers as needed to maintain uninterrupted service. Keep backup chilled water so refilling does not interrupt service.

End-of-service cleaning
At the end of service, empty and thoroughly clean dispensers and any reusable items. Sanitize and store them dry. Properly label and store any remaining bulk water containers for future use.
