    Prepare bread

    Lightly brush both sides of the bread slices with a little olive or neutral oil if using. Toast the slices in a hot skillet over medium heat or in a toaster until golden and crisp at the edges, about 2–3 minutes per side in a skillet or 3–4 minutes in a toaster depending on your appliance.

    Butter (optional)

    If using butter, rub or spread the softened butter on the hot toast so it melts into the bread. This is optional but adds richness and helps the tahini adhere.

    Apply tahini

    Spread about 1.5 tablespoons of well-stirred tahini evenly over each hot toast slice while still warm so it softens and becomes slightly runny.

    Slice banana

    Peel the ripe banana and slice on the diagonal into 1/4-inch (6 mm) slices. Arrange slices in a single layer on top of the tahini-covered toast.

    Make caramel

    In a small heavy-bottomed saucepan, combine 3 tablespoons granulated sugar and 1 teaspoon water over medium heat. Without stirring, swirl the pan gently if needed until the sugar dissolves and begins to turn an amber color at the edges, about 4–6 minutes. Watch closely to avoid burning.

    Finish caramel

    When the sugar reaches a deep amber, remove the pan from the heat and carefully add 2 tablespoons warm heavy cream — it will bubble vigorously. Stir in 1 teaspoon unsalted butter until smooth. If caramel seizes, return briefly to low heat and stir until smooth. Add a pinch of fine sea salt and taste; adjust with a tiny additional pinch if you like a more pronounced salty contrast. Let the caramel cool for 1–2 minutes until slightly thickened but still pourable.

    Drizzle

    Using a spoon, drizzle the warm salted caramel over the banana-tahini toast in a thin stream. Use as much as you like; about 1 tablespoon per slice is typical.

Finish & Garnish

    Sprinkle a small pinch of flaky sea salt over each toast to enhance the salted caramel and tahini flavors.

    Optionally dust lightly with ground cinnamon and scatter toasted sesame seeds for texture and visual appeal.
