Prepare tomatoes: If using large tomatoes, core and roughly chop to yield about 2 cups. For a cleaner texture, briefly peel by scoring skin and blanching 15–20 seconds, then plunge into ice water and peel.

Add chopped tomatoes, 1 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon paprika and 1/2 teaspoon sugar (if using). Stir and bring to a gentle simmer. Cook, stirring occasionally, until tomatoes break down and mixture is slightly thickened, about 8–10 minutes. Adjust seasoning to taste.

When the tomato base has thickened but still has some moisture (so the eggs can mingle without immediately drying out), push the tomato mixture to one side of the skillet or reduce heat to medium-low. Melt 1 tablespoon butter in the cleared space or in a separate nonstick pan over low–medium heat.

Crumble 3/4 cup barrel-matured feta over the hot eggs and tomatoes, letting some soften into the scramble and some remain as salty bites.

Serve immediately with toasted crusty bread, warm flatbread, or over steamed rice. Offer extra chili slices and lemon wedges at the table.
