Roasted vegetables

Preheat and prepare
Preheat the oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper or lightly grease it with oil.

In a large bowl, combine the potatoes, carrots, 2 tablespoons olive oil, minced garlic, thyme, smoked paprika, ground cumin, 3/4 teaspoon salt and 1/2 teaspoon black pepper. Toss to coat thoroughly so spices and oil evenly cover the vegetables.

Spread the potatoes and carrots in a single layer on the prepared baking sheet, leaving space in the center or one side for the peas to be added later (peas will roast for less time). Roast for 20 minutes, stirring or flipping once halfway through to promote even browning.

After 20 minutes, remove the pan from the oven. Add the peas to the baking sheet, drizzle the remaining 1 tablespoon olive oil over the peas and sprinkle the remaining 1/4 teaspoon salt and 1/2 teaspoon black pepper over everything. Gently toss the peas with the roasted potatoes and carrots on the sheet so they are mixed in a single layer.

Return the sheet to the oven and roast for an additional 10–12 minutes, or until potatoes are tender and golden at the edges and peas are heated through with a slight roasted color. If you prefer more char, roast another 2–3 minutes, watching carefully so nothing burns.

Remove the baking sheet from the oven and transfer the roasted vegetables to a serving bowl or leave on the sheet for a rustic presentation.

While still warm, drizzle the optional 1 teaspoon olive oil over the vegetables, grate the lemon zest over the top and squeeze the lemon juice (about 1–2 tablespoons) evenly. Toss gently to combine so the citrus brightens the dish.

Sprinkle the crumbled feta evenly over the warm vegetables so it softens slightly but retains some texture. Garnish with chopped parsley and, if you like heat, a pinch of red pepper flakes.

Taste and adjust seasoning with additional salt or pepper if needed. Serve warm as a side dish or light main.
