Potato Purée

Prepare and cook potatoes
Peel the potatoes and cut them into uniform 1½–2 inch chunks so they cook evenly. Place potatoes and the 2 peeled garlic cloves in a large pot and cover with cold water by about 1 inch. Add 1 teaspoon of the salt. Bring to a gentle boil over medium-high heat, then reduce to a simmer. Cook until a fork slides through easily, about 15–20 minutes depending on size.

Warm dairy and drain
While potatoes cook, combine the milk, cream, and butter in a small saucepan and warm over low heat until the butter melts and the mixture is hot but not boiling. Keep warm (this helps produce a silkier purée). Drain the potatoes and garlic in a colander thoroughly for 1–2 minutes to remove excess water; return to the hot pot off the heat to allow a minute for steam to escape.

Mash and finish
Pass potatoes and garlic through a ricer or food mill into a clean bowl for the smoothest texture. If you don't have one, use a sturdy potato masher and then beat briefly with a whisk. Gradually add the warm milk/cream/butter mixture, stirring gently until incorporated and smooth. Season with the remaining 1 teaspoon salt and the 1 teaspoon freshly ground black pepper. Taste and adjust seasoning. If you want it looser, add up to 2 more tablespoons warm cream or milk. Stir in 1 tablespoon olive oil for sheen and extra silkiness.
Lemon‑Oregano Sauce

Whisk together the extra-virgin olive oil, lemon juice, lemon zest, minced garlic, chopped oregano, red wine vinegar, honey (or sugar), ½ teaspoon salt, and ¼ teaspoon black pepper in a small bowl until emulsified. Taste and adjust acidity or sweetness: add more lemon juice for brightness or a pinch more honey if too sharp. Let the sauce sit at room temperature for 10 minutes to meld flavors.

Spoon the potato purée into a shallow serving bowl or individual plates and smooth the surface. Drizzle the lemon-oregano sauce over the purée in a generous ribbon (start with about 2–3 tablespoons of sauce per serving, reserving a little to taste). Scatter the crumbled feta evenly over the top, using about 3 tablespoons per serving. Sprinkle the reserved fresh oregano leaves and crack a little extra black pepper across the dish. If desired, finish with a light drizzle (about ½ teaspoon) of extra-virgin olive oil and a small pinch of flaky sea salt on top of the feta for contrast.

Serving and make-ahead notes: The purée can be prepared ahead and kept warm in a low oven (90–100°C / 200°F) covered; stir in a touch more warm milk if it thickens before serving. The lemon-oregano sauce can be made several hours ahead and refrigerated; bring to room temperature and whisk before using. Add feta just before serving.
