    Prep the glass

    Run a lime wedge around the rim of a highball or Collins glass. Dip the rim into coarse salt or Tajín placed on a small plate to coat. Set the glass aside.

    Build the drink

    Fill a cocktail shaker or mixing glass halfway with ice. Add 2 oz Calle 23 Blanco tequila, 0.75 oz fresh lime juice, 0.5 oz fresh grapefruit juice (if using), and 0.25 oz simple syrup or agave. Stir briskly for about 10–15 seconds to chill and dilute slightly.

    Assemble

    Fill the prepared glass with fresh ice (about 1 cup). Strain the chilled tequila mixture into the glass.

    Top with soda

    Top the drink with about 3 oz grapefruit soda. Give the drink one gentle stir (1–2 turns) to integrate the soda without flattening it.

    Garnish and serve

    Garnish with a lime wheel or wedge and, if desired, a grapefruit wedge. Serve immediately with a straw or stirrer.
