If using simple syrup from scratch: combine equal parts sugar and hot water, stir until sugar dissolves, cool before using. Measure 1 tsp for the recipe.
Assemble Mocktail

Add Citrus and Sweetener
Remove chilled glass or dump the ice water. Add 1 tablespoon fresh lemon juice and 1 teaspoon simple syrup to the bottom of the glass.

Add Aromatics
Add 2 dashes of non-alcoholic orange bitters (or 1 small drop of orange blossom water) into the glass and gently stir the lemon juice, simple syrup, and bitters together with a bar spoon (6–8 gentle stirs).

Add Ice
If using a rocks glass, add 3–4 ice cubes to the glass. For a flute or coupe, no ice is needed in the glass; instead chill the glass as instructed.

Top with Non-Alcoholic Sparkling Wines
Carefully pour 1/2 cup (120 ml) Noughty non-alcoholic sparkling Chardonnay into the glass, then gently add 1/2 cup (120 ml) Thomson & Scott non-alcoholic Blanc de Blancs. Pour slowly down the side of the glass to preserve effervescence and avoid overflowing. If preparing two servings, scale quantities accordingly.

Finish & Garnish
Give the drink one very gentle stir (1–2 turns) to integrate without flattening the bubbles. Express a lemon peel over the drink to release oils, then rub the peel around the rim and drop it into the glass. Slap a mint sprig between your palms to release aroma and place it atop the drink as garnish.
Serving

Serve immediately while sparkling. Recommend enjoying within a few minutes so the effervescence and aromatics are at their best.

Optional: Adjust sweetness with an extra 1/4 tsp simple syrup if desired, or add more lemon for brightness.
