Prepare Glass

    Optional sugar rim

    If you want a sugared rim with mastiha aroma: rub a grapefruit wedge around the glass rim, then dip the rim into a shallow plate with superfine sugar mixed with a pinch of powdered mastiha (or plain superfine sugar). Set the glass aside.

Build Cocktail

    Fill a large wine glass or rocks glass with cubed ice (about 1 cup).

    Pour 1.5 oz Lyre's Italian Orange over the ice.

    Add 0.5 oz mastiha (or mastiha syrup). If using concentrated mastiha spirit, use the lower amount and consider adding the optional 0.25 oz simple syrup if additional sweetness is desired.

    Add 0.25 oz fresh lemon juice to brighten the cocktail and balance sweetness.

    If you prefer a slightly sweeter spritz, add 0.25 oz simple syrup. Stir gently with a bar spoon 6–8 times to combine ingredients without flattening the soda.

    Top gently with 3 oz chilled grapefruit soda. Pour slowly over the back of a spoon or down the glass interior to preserve effervescence. Give one very gentle stir (1–2 rotations) to integrate the soda.

Garnish & Serve

    Garnish with a grapefruit wheel or a thin grapefruit twist hooked on the rim. Optionally drop the wheel into the glass for additional aroma.

    Serve immediately while the soda is fizzy.
