Marinated Ling Cod Preparation

Marinate the Fish

In a bowl, combine chipotle peppers, olive oil, lime juice, minced garlic, salt, and black pepper. Add the ling cod fillets, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.

Cook the Fish

Preheat the grill or a skillet over medium-high heat. Remove the ling cod from the marinade and cook for 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

Roast the Garlic

Preheat the oven to 400°F (200°C). Wrap the whole garlic cloves in aluminum foil and roast for 30 minutes, until soft.

Cook the Potatoes

In a large pot, boil the chopped potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.

Mash the Potatoes

Squeeze the roasted garlic out of its skins into the potatoes. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

Salsa Verde Preparation

Make the Salsa

In a blender, combine chopped tomatillos, cilantro, jalapeño, lime juice, and salt. Blend until smooth. Adjust seasoning as needed.
