Prepare garlic
Peel the garlic cloves and finely mince them, or use a garlic press. If you prefer a milder garlic flavor, smash the cloves and let them sit 5–10 minutes before using, or use 1 clove instead of 2.
Combine tahini and lemon
In a medium mixing bowl, add 1 cup tahini and 1/4 cup fresh lemon juice. Stir vigorously with a whisk or spatula — the mixture will seize and thicken initially. Continue stirring until it lightens slightly in color and smooths out, about 30–45 seconds.
Add garlic, oil, and spices
Add the minced garlic, 2 tablespoons extra-virgin olive oil, 1/2 teaspoon ground cumin, 1 teaspoon salt, and 1/4 teaspoon black pepper to the tahini-lemon mixture. Stir to combine.
Thin to desired consistency
Slowly whisk in 1/2 cup warm water a few tablespoons at a time until the sauce reaches a smooth, pourable consistency. If the sauce is still too thick for your use, whisk in up to an additional 1/4 cup warm water (use the optional warm water ingredient) until desired thickness is achieved. Taste and adjust seasoning: add more salt, lemon, or water as needed.
Finish and garnish
Transfer to a serving bowl. Drizzle 1 teaspoon olive oil over the top and sprinkle with 2 tablespoons chopped fresh parsley and a pinch (about 1/4 teaspoon) smoked paprika or sumac if using. Serve chilled or at room temperature.
