Prep peppers and vegetables

Wash all peppers and vegetables. Remove stems from jalapeño, serrano, and habanero peppers. If you prefer less heat, remove seeds and inner membranes from the peppers. Roughly halve or chop peppers to help blend. Roughly chop the onion and carrot. Peel garlic cloves.

Sauté aromatics

In a small skillet over medium heat, add the neutral oil and warm for 30 seconds. Add the chopped onion, carrot, and garlic and sauté for 4–6 minutes, stirring occasionally, until softened and slightly golden. This mellows raw garlic and onion and sweetens the carrot.

Simmer peppers

Transfer the sautéed aromatics to a small saucepan. Add the prepared peppers, distilled white vinegar, water, kosher salt, sugar, cumin, and black pepper. Bring to a gentle simmer over medium-low heat, cover partially, and simmer for 8–10 minutes until the peppers and vegetables are very soft and the flavors have melded.

Blend until smooth

Carefully transfer the hot pepper mixture to a blender. Add the fresh lime juice. Cover the blender with a towel over the lid (to prevent steam pinhole accidents) and blend on high until completely smooth, about 30–60 seconds. If the sauce seems too thick, add up to 2 tablespoons additional water or vinegar, 1 tablespoon at a time, to reach desired consistency.

Adjust seasoning

Taste the blended sauce (use caution — it will be hot). Adjust salt to taste and add the optional chopped cilantro for a fresh note. If you want sweeter balance, stir in an additional 1/2 teaspoon honey or sugar. For brighter acidity, add another 1/2 teaspoon lime juice or 1 tablespoon vinegar.

Strain (optional)

For a silky-smooth hot sauce, pour the blended mixture through a fine-mesh sieve into a bowl, using the back of a spoon to press solids through. Discard solids left in the sieve.

Cool and bottle

Let the sauce cool to room temperature, then transfer to a sterilized bottle or jar. Seal and refrigerate. Flavor will mellow and deepen after 24–48 hours. Store in the refrigerator for up to 6 weeks.
