Make aromatic base

In a large heavy-bottomed pot or Dutch oven, heat 1 tablespoon olive oil and 2 tablespoons unsalted butter over medium heat until the butter foams. Add the diced onion, celery and carrot. Sweat, stirring occasionally, until softened and translucent, about 6–8 minutes.

Add flavorings

Stir in the minced garlic and minced ginger and cook 30–45 seconds until fragrant. Add 1 tablespoon tomato paste and 2 teaspoons all-purpose flour; cook 1 minute, stirring constantly to remove raw flour taste. Deglaze with 1 tablespoon dry white wine, scraping any browned bits from the bottom.

Simmer the broth

Add 6 cups low-sodium chicken broth and 2 cups water to the pot. Add 1 bay leaf and 2 thyme sprigs. Bring to a gentle simmer, reduce heat to medium-low, and simmer uncovered for 12–15 minutes to marry flavors.

Cook crab claws

Carefully add the crab claws (shell-on) to the simmering broth. Simmer gently 6–8 minutes until the shells turn bright orange and meat is cooked through. If using small claws, 4–6 minutes may be sufficient. Remove the claws with tongs and set aside to cool slightly.

Optional: cook shrimp

If using shrimp, add them to the simmering broth for the last 2–3 minutes of the crab-cooking time, until pink and opaque. Remove shrimp with a slotted spoon and set aside with crab claws.

Extract claw meat

When cool enough to handle, crack the crab claws and remove the meat. Reserve the shells. Chop larger pieces of claw meat into bite-size pieces and fold into a bowl with the picked lump crab meat (8 oz). Keep the combined crab meat chilled until ready to finish the soup.

Build extra flavor (optional)

For a richer broth, return the reserved crab shells to the pot and simmer for an additional 10 minutes, then strain the broth through a fine-mesh sieve into a clean pot, discarding shells and solids. Return strained broth to the stovetop and proceed.

Thickening, finishing and seasoning

Adjust consistency

With the broth simmering on low, stir in 1/2 cup heavy cream. In a small bowl, temper 1 egg yolk by whisking it, then slowly whisk in 2–3 tablespoons of the hot soup broth to raise its temperature. Slowly whisk the warmed yolk mixture back into the pot to add body and silkiness. Heat gently — do not boil after adding the egg yolk or it will curdle.

Finish with butter and herbs

Stir in 1 tablespoon cold cubed butter, 1 tablespoon chopped fresh parsley and 1 tablespoon sliced chives. Add 1 teaspoon fish sauce (or soy sauce), 1 tablespoon fresh lemon juice, 1 teaspoon salt, 1/2 teaspoon freshly ground black pepper and 1/4 teaspoon red pepper flakes if using. Taste and adjust seasoning as needed.

Return crab and shrimp to soup

Gently add the reserved crab meat and cooked shrimp back into the warm (not boiling) soup. Heat just until the seafood is warmed through, about 1–2 minutes. Remove and discard bay leaf and thyme sprigs.

To serve

Ladle the soup into warmed bowls, making sure each bowl gets a generous portion of crab meat and any shrimp. Garnish with additional chopped parsley and sliced chives if desired. Serve immediately with lemon wedges and crusty bread or crackers on the side.
