Prepare Fish & Marinade

Clean and dry

Rinse the black sea bream under cold water and pat thoroughly dry inside and out with paper towels. Score each side of the fish with 3 shallow diagonal cuts about 1/2 inch deep to help the marinade penetrate and to ensure even cooking.

Make marinade

In a bowl combine kosher salt, black pepper, minced garlic, grated ginger, soy sauce, mirin, neutral oil, and the zest and juice of the lemon. Whisk until the salt dissolves and the mixture is homogenous.

Marinate fish

Place the fish on a rimmed tray. Rub the marinade evenly over the outside, into the scored cuts, and inside the cavity. Insert 3 scallion lengths and 3 thyme or shiso leaves into each cavity. Cover and refrigerate for 30–45 minutes (do not exceed 1 hour for whole fish). Remove fish from fridge 20 minutes before grilling to come toward room temperature.

Prepare Charcoal Grill

Light the charcoal in a chimney starter and let it burn until the coals are covered with a fine white ash (about 20–30 minutes). For direct/indirect setup: bank the coals to one side to create a hotter direct area and a cooler indirect side. If using wood chips, drain and scatter a small handful over the coals just before grilling to add smoke.

When coals are ready, oil the grill grate: fold a paper towel, dip in olive oil, and using tongs wipe the hot grate to prevent sticking. Also brush the fish lightly with olive oil just before placing on the grill.

Grilling

Initial sear (direct heat)

Place the fish skin-side down over the direct hot zone. Sear for 3–4 minutes without moving to develop a char and to help the fish release from the grate. Keep the lid open for a moment to monitor; if flames flare, move the fish briefly to indirect heat until flames subside.

Cook through (indirect heat)

After searing, transfer the fish to the cooler indirect side of the grill. Close the lid and cook for another 8–12 minutes, depending on fish size (for 10–12 oz fish expect ~10 minutes). Total target internal temperature for the thickest part is 125–130°F (52–54°C) for moist, slightly translucent center or 135°F (57°C) for fully opaque. Rotate the fish once halfway through for even cooking.

Finish with high heat if needed

If the skin needs additional crisping, return briefly (30–60 seconds per side) to direct heat at the end. Watch closely to avoid burning.

Resting & Serving

Transfer the fish to a serving board. Tent loosely with foil and rest for 5 minutes to let juices redistribute. Remove scallions and herbs from the cavity if desired.

Serve whole or portioned: garnish with chopped cilantro or parsley, additional lemon wedges, and the reserved scallions. Offer soy sauce or a light ponzu on the side if desired.
