Pastry Preparation
Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Add the oil and mix well until the mixture resembles breadcrumbs.
Add Water
Gradually add water, a little at a time, kneading the mixture until a smooth and firm dough forms. Cover the dough with a damp cloth and let it rest for 30 minutes.
Filling Preparation
Cook the Onion
In a pan, heat 1 tablespoon of oil over medium heat. Add the chopped onion and sauté until golden brown.
Add Spices
Add cumin seeds, garam masala, coriander powder, turmeric powder, red chili powder, and salt to the onions. Stir for 1-2 minutes until fragrant.
Assembly and Cooking
Roll the Pastry
Divide the dough into small balls. Roll each ball into a thin circle on a floured surface.
Fill the Samosas
Cut the rolled circle in half, forming two semi-circles. Take one semi-circle, and create a cone shape by folding it. Seal the edge with a little water. Fill the cone with the potato-pea filling and seal the top by pressing the edges together.
Fry the Samosas
Heat oil in a deep frying pan over medium-high heat. Fry the filled samosas in batches until golden brown and crispy. Drain on paper towels.
