Mix the Cure
In a bowl, combine salt, black pepper, brown sugar, Cure #1, and liquid smoke. Mix thoroughly.
Cure the Beef
Rub the cure mixture evenly over the beef belly, ensuring all surfaces are covered. Place in a vacuum-sealed bag or wrap tightly in plastic wrap.
Refrigerate
Refrigerate the cured beef for 5-7 days, flipping the meat every day to ensure even curing.
Cooking
Preheat the Oven
Preheat your oven to 200°F (93°C).

Once cured, remove the beef from the refrigerator and rinse off excess cure. Slice the beef belly into strips resembling bacon.
