Preparation

1

Prepare the Meat

Trim the Wagyu beef belly of excess fat and ensure it is evenly shaped for uniform curing.

2

Mix the Cure

In a bowl, combine salt, black pepper, brown sugar, Cure #1, and liquid smoke. Mix thoroughly.

3

Cure the Beef

Rub the cure mixture evenly over the beef belly, ensuring all surfaces are covered. Place in a vacuum-sealed bag or wrap tightly in plastic wrap.

4

Refrigerate

Refrigerate the cured beef for 5-7 days, flipping the meat every day to ensure even curing.

Cooking

5

Preheat the Oven

Preheat your oven to 200°F (93°C).

6

Slice the Bacon

Once cured, remove the beef from the refrigerator and rinse off excess cure. Slice the beef belly into strips resembling bacon.

7

Cook the Bacon

Place the bacon strips on a baking sheet lined with parchment paper. Cook in the preheated oven for 1.5 to 2 hours, or until crispy.

8

Cool and Store

Allow the bacon to cool completely before storing in an airtight container in the refrigerator.
