Cook the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper. Sauté for about 5-7 minutes until the vegetables are softened.

Add Garlic and Spices

Stir in the minced garlic, paprika, and cumin. Cook for another minute until fragrant.

Add Tomatoes

Pour in the canned diced tomatoes along with their juices. Season with salt and black pepper. Simmer for 10 minutes, stirring occasionally.

Poach the Eggs

Make small wells in the tomato mixture and crack an egg into each well. Cover the skillet and cook for about 5-7 minutes, or until the eggs reach your desired doneness.

Finish with Feta and Herbs

Sprinkle the crumbled feta cheese over the top and garnish with fresh parsley before serving.

Serve the shakshuka hot, alongside cubes of challah bread for dipping.
