Prepare the Shrimp

In a bowl, combine the Fogo Island shrimp with lime juice. Ensure the shrimp are fully submerged. Cover and refrigerate for about 30 minutes until the shrimp turn opaque.

Chop Ingredients

While the shrimp is marinating, dice the avocado, finely chop the red onion, and mince the jalapeno (remove seeds for less heat, if preferred). Roughly chop the coriander.

Combine the Ceviche

Once the shrimp has marinated, drain some of the lime juice if desired, then add the diced avocado, red onion, jalapeno, and coriander to the shrimp. Mix gently to combine.

Add Chamoy

Drizzle chamoy sauce over the ceviche mixture and stir gently to incorporate.

Serve

Serve the ceviche in bowls with house tortilla chips on the side for dipping.
